Program/Department: Old School - Cafe & Event Center
Schedule: 15-20 Hours/Week (On-call)
Job Summary: Responsible for preparation and serving of meals for clients and on-duty staff.
|Demonstrates Competency in the Following Areas:|
|Follows planned menus to determine types and quantities of entrees, vegetables and soups to be prepared;|
|Provides meals and snacks by adjusting recipes for quantity, taste and quality using safe and sanitary handling food techniques|
|Maintains a sanitary kitchen and serving area, using the required cleaning and sanitizing techniques, products and equipment;|
|Creates aesthetically pleasing food presentations following direction of the head chef.|
|Assists in maintenance of food and supply inventory and insures the availability of food and supplies to meet agency needs;|
|Assists head chef in filling and distributing food and supply orders, as needed;|
|Completes all training required for the position|
|Familiar with Farm to Table concept and able to utilize fresh ingredients according to signature dishes developed by the Old School head chef|
|Ensures meals are ready at specified times and at required temperatures|
|Consults with head chef regarding use of left-overs.|
|Consults with head chef on modified and/or special diets, as necessary.|
|Follows proper policy & procedure and SOPs when washing, trimming or preparing food.|
|Measures and mixes ingredients according to approved recipes, using blenders, mixers, grinders, slicers, etc.|
|Makes café and event fare, including desserts following recipes and banquet orders.|
|Cooks meat, fish and fowl in a variety of ways such as baking, roasting, broiling and steaming.|
|Carves meat, fish and fowl into individual servings according to menu combinations and patient diet orders.|
|Tests foods with temperature control to ensure doneness. Adjust hot holding temperature as necessary.|
|Improves flavor and texture of food by adding ingredients or seasonings as approved by head chef.|
|Serves food to and interacts positively with customers of the Old School, including but not limited to staff and guests during meal times.|
|Observes and initiates infection control practices at all times.|
|Maintains kitchen in a clean, neat and organized manner.|
|Adheres to dress code, appearance is neat and clean.|
|Completes annual education requirements.|
|Maintains regulatory requirements, including all state, federal and JCAHO regulations.|
|Maintain and ensures client confidentiality at all times.|
|Reports to work on time and as scheduled; completes work within designated time.|
|Wear identification while on duty; use computerized time clock correctly.|
|Completes Essential Learning in-services and returns in a timely manner.|
|Attends annual review and performs departmental in-services.|
|Represents the organization in a positive and professional manner.|
|Complies with all organizational policies regarding ethical business practices.|
|Communicate the mission, service philosophy and guiding principles of Trillium Family Services, as well as the department mission.|

Education: Degree not required
Certificates, Licenses, Registrations: Current Food Handler’s Card
Experience: One year experience in preparing and cooking large quantities of food for groups of 50 or more.
Job Knowledge: To establish a routine with some opportunity to contribute to the development of new procedures and use own judgment. Most work is routine with an occasional new task. Perform duties with direction from assigned supervisor.
Skills: Must be able to read recipes and adjust contents as needed for size of group. Position must be able to work alone and in a team; must be flexible to quick menu changes; must be able to life 50lbs independently.
